Recipe Alert- Chocolate Peanut Butter Cinnamon Balls

I started my morning off with a work out times two. I headed to the gym for a lovely class called Tight end. And it is just what the title is, exercises to tighten your rear-end! Then I headed to a 50 minute spinning class. Check out my stats! I think my calorie burn was a little low today because of my rear-end feeling so, um, sore from the first class..eek, just thinking about how I’m going to feel tomorrow!

Okay so thank god for lovely bloggers and their amazing posts. I was reading Eat Yourself Skinny by Kelly and came across her recipe for Chocolate Peanut Butter balls and immediately thought, I have to make these!! She incorporated Stevia but I decided to go another route and use unsweetened apple sauce. If you are looking for baking substitutes check out my previous blog post “Favorite Baking Substitutes

Ingredients:

1 cup rolled oats

1 medium banana

4 Tbsp powdered peanut butter (I used Just Great Stuff Organic Powdered Peanut Butter)

1 Tbsp unsweetened organic cocoa powder

1 tsp vanilla

2-3 Tbsp of unsweetened apple sauce

1 Tbsp Cinnamon

Combine all ingredients in a bowl and mix thoroughly until completely combined.  Then using a tablespoon, scoop out mixture and roll into a ball.  Place on a plate and continue until all balls are made, refrigerate.
