Breakfast for my Hunny

My Saturday morning started off with a high intensity spin session at WIO in Hoboken. I love this class, I definitely wish I could take it more often but the times just don’t work out for my work schedule. I came home and was so eager to make breakfast. The night before I made a cinnamon swirl bread (yes I spent my Friday night baking bread), thanks Averie for the recipe again! I prepared this bread on Friday night with some yummy homemade wine mixed with my favorite Kombucha Hibiscus tea.

With the recipe I found on Averie’s blog I made a few changes. I opted to use Whole wheat flour and I didn’t have buttermilk in the house so I looked up a substitution and used Lactaid milk and lemon juice.

Ingredients:

1/3 cup granulated sugar

1 tablespoon cinnamon

1/4 cup unsalted butter, melted

1 large egg

1 cup light brown sugar, packed

1/4 cup canola or vegetable oil

1 tablespoon vanilla extract

1 cup buttermilk (or 1 tablespoon of lemon juice then fill the measuring cup with milk until it reaches 1 cup)

2 cups Whole Wheat flour

1 teaspoon ground nutmeg

3/4 teaspoon baking soda

My husband loved it! I was so happy. Our day continued to wandering around Hoboken and lounging on the pier with our pup to catch some rays. The kids love the munchkin of a dog we have so he was definitely entertained the whole time we were out there.

My husband’s brother and his girlfriend came to visit and we were all craving Mexican food. Usually we would go to Charritos which is probably one of the best Mexican restaurants but we opted to take them somewhere different. We decided that they would love Dos Caminos in the city and they definitely did! Sangria, Fish Tacos, and Guac…how could it get any better than that?

One of the reasons my brother-in-law and well we can call her my sister-in-law came was because we were going on a motorcycle ride all day Sunday! Of course I brought my camera and post processed the pictures to HDR’s. Check them out, tell me what you think!

  1. So glad that you were able to try the bread and figure out a quickie buttermilk substitution. Yes, either lemon juice or white vinegar (about 1-2 tbsp per 1 cup of milk, wait 10 minutes, instant buttermilk). Glad your hubby approved of the bread :)
